Considering that mimics prefer to kill their prey while they are asleep and would hesitate to attack anyone who's making noise that could attract more people a large dog would maybe denture them from trying to hunt that person unless they are in a desperate situation. @NepoBaby

Also yeah I think they’d be good deterrent for mimics in general but it really depends on the situation. Obviously if it’s an elder mimic you’re pretty much screwed but even if it isn’t there’s still a good amount of danger. Since the mimics stalk their victims and watch closely over their schedule then I feel it’s safe to say that they’re extremely patient, meaning they could prob find a way to get the dog out of the equation in the time of stalking. Plus young mimics eat smaller animals so dogs are definitely not off the menu, meaning mimics may be more familiar with them and know their behavioral patterns better. Sure they won’t eat your dog, but if they know your schedule they might know the most opportune time to sneak in your house and put the dog out of commission before going after you. Sure it may be a bit of a hassle, but it’s possible. Desperate mimics are prob gonna ignore the dog too.
